Creole Chicken stuff! (I know, *again.* Hey, I like it. And chicken breasts were the best sale this week.)

Only $14 for 3+ lbs of chicken, the rice mix, and the cans of diced tomatoes.

Although if, for future reference, anyone has some interesting ideas on something I can do to make 3-8 lbs of chicken breasts interesting to eat in about 60-90 min, I'm happy to hear it.

Take Chicken Breast, Shake in a ziploc with Flour, Garlic Salt( or whatever tempts your taste buds, and Pepper. Tenderize them soundly. Good for working out a day's tension. In other words, beat the little dearies until they are 1/4 inch thin with a meat tenderizer (grooved hammer looking thingy) or a large spoon (if you suffered a lot of tension). Fry, in a large pan you have a cover for, with a TBS of olive oil, until thoroughly cooked(about 10 mins). Add 1 little jar of capers, juice and all, 2 little jars of artichokes hearts, juice and all, and one glass of wine. Cover and simmer for about 10 mins, meanwhile in a pot make a few cups of your fave pasta to serve the Chicken over. My mom always used angel hair, so she called this Chicken Angelo. It will help with a few of the breasts. This recipe is for 2 people so add, or subtract as needed. Michelle H
